We’re looking for an experienced baker in Forest Hill, from which we supply our three coffee shops in SE London. Applicants should have good experience in the production of sourdough bread and viennoiserie, while also being interested and passionate about seasonal produce that we can work into our production throughout the year. The right candidate will understand that amongst the daily production of bread and pastries they will need to provide assistance in deliveries, orders and stock control as well.

We are a small team of 5, in a relatively new bakery space. We do not operate a wholesale bakery, only supplying our own shops which keeps the workload manageable. We try as much as we can to make it an enjoyable place to work. We operate a bake shift which is 4am – 12pm (3-11 on Fridays and Saturdays) and then a day shift from 7am – 3pm. It is uncommon that people stay later than the set hours.

A recent Food Safety II Certificate would be an advantage but we can supply an online course; but in any case, high standards of cleanliness, hygiene and safety are essential.

Skills and Personal attributes required:

• An active interest in good food and drink, bakeries, coffee shops, restaurants, local small businesses – partly to understand the standards and style we’re aiming for, but also we like to cook lunch and eat together! So we’re always looking for vaguely like-minded people.

• Strong communication skills – you will be part of a small, close-knit team of bakers, and will need to be able to chat over the shaping table as well as effectively communicate using the Slack app on your phone.

• Drive and energy – while a shift is rarely over 8 hours long, we need people who come to work full of energy and ready to work a positive, effective day.

• Consistent attention to detail – this should go without saying to someone applying as an experienced baker, this spreads further than just making nice things; from counting and packing orders in the morning, through receiving and fulfilling occasional special orders or requests, to completing a thorough closedown while observing daily compliance checks.

• Responsible and reliable – we will be entrusting you to turn up and open on your own when you start the bake at 3-4am, when you will then give the packed trays to the driver before anyone else arrives at work. To this end, you need to be able to arrive at work reliably, which includes not relying on public transport for a long commute. If you can’t drive, cycle, walk or get one bus to work then we may not be confident taking you on for this role.

Benefits include good discounts at our affiliated businesses Joyce Bar and Salthouse Bottles, as well as free coffee in any of the shops. We provide lunch each day at work.

Please apply via this advert, including a good cover letter explaining a bit about yourself and why you’re applying for the baker role at Browns of Brockley.
